From winemaker Andrew Jones comes this esoteric delight, a lightly sparkling (and lightly colored) rosé of Cabernet Franc made in the pétillant naturel style. Timing is everything with this wine as it must be bottled and capped with just the right amount of remaining natural sugars to continue fermentation (thus, creating captured carbonation). It's not an easy trick to pull off, but when it goes right, it really goes right.
